Summary

The Cook position is located at Loch Raven in Baltimore Maryland under Nutrition and Food Service. Cook at the WG-4 level performs the full range of simple cooking operations by preparing and cooking items that require little or no processing and food service duties that require proficient in special procedures. Provides technical support to the Dietitian and tray line, and has a broad knowledge of service operations including food handling, preparation, storage and delivery.

Responsibilities

  • Prepares food by washing, peeling, chopping, grinding, cutting, culling, slicing, seeding, dicing, pureeing, flouring, breading and paring.
  • Assembles meal items for completeness, accuracy, attractiveness and assure food items are served in accordance with patient prescribed therapeutic diets.
  • Identifies and track errors, takes corrective action as required.
  • Communicate with Nursing personnel and/or ward clerk to clarify order which are incomplete or conflicting.
  • Prepares grill food such as pancakes, French toast, sausage, eggs, hamburgers and grilled sandwiches and broil meats.
  • Cooks food according to times and temperatures prescribed in standardized recipes.
  • Makes Hot and cold sandwiches.
  • Follows establish, procedures to portion food for distribution and meal service.
  • Prepares pureed and convivence food.
  • Calculates serving need.
  • Distributes, pre-weighed and/or measure food items, and proportioned condiments and garnishes.
  • Operates variety of kitchen equipment that utilizes gas, steam, electricity, or microwave heat sources.
  • Operates and cleans equipment and areas after use practicing "clean as you go".
  • Provides final check of patient meal trays of accuracy on the tray line.
  • Follows food handling sanitation procedures to ensure food is dated, and store in established procedures.
  • Orders supplies in accordance with established procedure.
  • Assist with inventories and placing orders.
  • Assist with inventories and placing orders.
  • Maintains stock level of supplies in designated areas.
  • Participates in Total Quality Improvement monitoring and documentation as assigned to facilitate continuous evaluation and improvement of Food Production and Food Service Performance.

SCREEN-OUT ELEMENT: Your qualifications will first be evaluated against the prescribed screen out element, which usually appears as question 1 in the on-line questionnaire. Volunteer work helps build critical competencies, knowledge, and skills and can provide valuable training and experience that translates directly to paid employment. You will receive credit for all qualifying experience, including volunteer experience.

Note: A full year of work is considered to be 35-40 hours of work per week. Part-time experience will be credited on the basis of time actually spent in appropriate activities. Applicants wishing to receive credit for such experience must indicate clearly the nature of their duties and responsibilities in each position and the number of hours a week spent in such employment.

Physical Requirements/Working Conditions: The work is performed in a kitchen area which is well lighted but often hot and noisy. Expose to steam, fumes, and order from cooking and to extreme temperature changes when entering refrigeration or freezer unit. There is a danger of slipping on wet floors that have been mopped or where food has been spilled. Cooks are required to stand and walk for several hours, frequent stooping, reaching, pushing and pulling, and bending. Frequent lifting or moving objects weighting up to 40 pounds unassisted, and occasionally lift or move objects weighing over 45 pounds with assistance.

Receiving Service Credit or Earning Annual (Vacation) Leave: Federal Employees earn annual leave at a rate (4, 6 or 8 hours per pay period) which is based on the number of years they have served as a Federal employee.
